00:00Don't let your tomatoes die on the counter. This is what to do with them. I'm going to show you
00:03how to make two different tomato sauces and one tomato jam. This is a real popular one at my house.
00:07When your tomatoes start to look bad, no matter what size of kind they are, just toss them in a
00:11bowl with a little olive oil, salt, pepper, and garlic, throw it onto a sheet tray, and roast
00:15them off. 425 degrees for about 20 to 25 minutes. You're really looking for color and smell. They're
00:20not all going to cook the same, and that's kind of the bonus here. This is honestly one of the
00:24best ways to really utilize something that you would otherwise turn to waste. Next one. I hate
00:28wasting anything that we have on photo shoots, and this is one of my favorite ways to use every
00:33single part of the tomato. This all started while working on Chipotle photo shoots when we would sit
00:38and chop tomatoes all day long, and I'm talking about I would fill up containers this big every
00:43single day with just the innards of these tomatoes. Why waste all of that when you can just throw it
00:48into a pot, throw some garlic and some other aromatics in there, and just let it cook all day?
00:52It can make one of the best pasta sauces you can have. You know, this is pasta pomodoro. This is
00:57the
00:58tomato. Nothing really hiding behind it. Another great thing to do is turning them into a tomato
01:02jam. Roma tomatoes can always start to look pretty nasty. All we're going to do is quarter these up,
01:07starting off with some olive oil, cooking ginger, garlic, and red onion. Drop about a tablespoon of
01:11salt into here. Next we're going to add our tomatoes, two tablespoons of brown sugar, half a cup of red
01:16wine vinegar. This can take around 30 minutes to cook. It might sound like a long time, but what you're
01:20going to get out of it is totally worth it. So after it's cooled off, we're just going to throw
01:23it into a jar,
01:24put this in the fridge, got tomato jam. It's probably going to last you about three weeks,
01:29if not longer than that. But with how good this is, I doubt it lasts that long. Especially for the
01:33summertime, like when you have so many tomatoes around, it's just another way to utilize that.
