Don’t be afraid to poach fish; it’s deliciously easy! In this video, learn how to make Martha Stewart’s poached bass recipe, a simple 20-minute meal that will take the guesswork out of dinner, and even if you think cooking fish isn’t in your wheelhouse, trust us, it can be.

00:00We have some gorgeous striped bass fillets here, and I'm combining two cups of water with one cup
00:05of white wine, the juice of a lemon, add one shallot that's been peeled and thinly sliced,
00:11and two cloves of garlic. Now just bring this liquid to a boil, reduce to a simmer for just
00:17two to five minutes. Add your fish fillets. You can do red snapper, striped bass, halibut,
00:23any nice fleshy fish. Cover it and cook for 10 minutes. Time your fish. And while it's cooking,
00:32you can make this delicious sauce to go over the top. We're going to use parsley, and about a half
00:39a cup of parsley, and we're going to use chervil. Look at the chervil. It's so beautiful. And we have
00:44some gorgeous chives, only about a quarter of a cup of chives. Add this to a bowl with olive oil,
00:50salt and pepper, and some lemon juice. So here is your sauce. Ready for the fish. And now just a
00:57very simple dressing. Just a teaspoon with a little bit of mustard, some salt, some pepper,
01:04some sherry wine, vinegar, and of course the finest olive oil and the best vinegar.
01:11And it is extremely tasty. So this can be poured over the salad. Rescue your fish from its poaching.
