00:00Another important feature, just a dash of tequila. Salsas, summer sauces, whatever you want to call
00:07them, are small pieces of excellent combinations of flavors. We have one navel orange that has
00:14been peeled and seeded and cut. One small pink grapefruit that's been supremed. And we have
00:21cherry tomatoes, red ones, about 10 of them. The same 10. This looks like yellow pepper,
00:25but it really is yellow cherry tomatoes. And we have some red onions, four scallions,
00:31green onions, cut crosswise. We have a little bit of jalapeno pepper and the tomatillo, which is the
00:38green berry-like, tomato-like fruit vegetable, and lots and lots of cilantro. We also would like to
00:46have the zest of a lemon and the zest of a lime. One tablespoon of lemon juice and one tablespoon
00:55of fresh lime juice. This juice is very important to the salsa. Another important feature, just a dash
01:01of tequila and a little bit of olive oil. And there you have a most unusual and delicious citrus salsa.
