00:18around that kind of make you feel like you're on the street in Japan.
00:21Japanese curry powder is iconic in a kind of katsu curry setting and we wanted to give
00:26people a new way to experience that combining two of my great big loves into one beautiful
00:31mesh.
00:31Once the chicken's out of the fryer we give it a quick dusting with sancho pepper.
00:35It's kind of another unexpected twist we tried to put on it.
00:38We're trying to layer things that just make you want to eat it over and over and over again.
00:44It immediately kind of brings you straight back to stumbling into a convenience store after
00:48a late night and it really just makes me very happy.
00:51I've been to Japan three times and I was really blown away by just kind of how different it
00:56was from Melbourne.
00:57We want all of our customers to, you know, be able to experience that real sense of closeness
01:02and belonging and warmth from our front of house staff all the way through to our food
01:05kind of weaving into everything.

01:12I suppose, a sense of something unexpected where maybe it inspires them to go travel and
