00:00¿Do you cook Filipino food often?
00:02Never.
00:03Really?
00:18I'm just like, I like burgers
00:19because I feel like they're a vehicle for condiments
00:21and I love condiments.
00:23Why do I love burgers?
00:24I guess it's because it's all in one hand
00:27awesome bite.
00:29If I had to put just one thing on my burger
00:32condiment-wise, it'd be sriracha.
00:34Without a doubt, too, ketchup, mayo
00:36has to be some combination of either or or both.
00:39One thing that should never touch my burger
00:40is blue cheese.
00:42I just don't understand why anyone wants to put
00:44mold and bacteria on.
00:46No, not for me.
00:47All condiments are meant for burgers.
00:50That's why they're condiments.
00:51I believe that condiments and burgers go together
00:53like peas and carrots.
00:54If I could share...
00:55No, I don't really do sharing, so...
00:58I don't really want to share my burger with anybody.
01:00There's a lot of people I'd like to sit down with,
01:01but share?
01:02No.
01:03It's got to be Anthony Bourdain.
01:06What up, Jordan?
01:08Yo, what up, Shay?
01:09How's it going?
01:09It is going so good.
01:12Have you been cooking during this whole self-isolation thing?
01:14I have been cooking.
01:15Every single day, I kind of choose a new recipe,
01:17and I go for it.
01:18So that's why I'm excited for today,
01:21because I'm going to learn how to make our burger.
01:23I wanted to make something obviously Filipino,
01:25thus our...
01:26But, and I also want it,
01:28and like Lawrence said,
01:29that you like stuff spicy a little bit, right?
01:31100%.
01:32But hold on, can I just tell you something?
01:34Can it please have langanese in there?
01:36Because I had a dream last night
01:37that our burger had langanese in it,
01:39and I was like, that would be sick.
01:40I've never had one with it,
01:42but that would be awesome.
01:43Well, that's great, because it has it.
01:45Yes!
01:46All right, so look,
01:47the burger has three meats in it.
01:48Wagyu, beef, bacon, and langanese.
01:51Oh my.
01:52All in it.
01:53Then it has lettuce, tomatoes,
01:55and then pickled onions,
01:57so that it helps kind of cut through that fattiness of it.
01:59I also have banana ketchup.
02:02So like spicy ketchup with banana peppers, basically.
02:06This is really like Filipino.
02:07I love it.
02:08Okay, so I was going to say also,
02:10I wonder if they did like pandasal buns,
02:12which for those of like people that don't know,
02:15it's a Filipino bun.
02:16It's like a little bit sweeter.
02:17They're kind of like those,
02:18wouldn't you say they're like Hawaiian bun-ish?
02:20It's like a Filipino,
02:21like Filipino version of like a King's Hawaiian bread.
02:24Yes, exactly.
02:26That's a great idea with the pandasal
02:27and like, and the langanese.
02:29I like it.
02:30I'm down.
02:30I'm down with this.
02:31That's all I have.
02:32Whenever my mom comes here,
02:33I have rice, langanese,
02:35cut up tomato,
02:36and the banana ketchup.
02:38That's the thing about our culture.
02:38It's delicious,
02:40but there's nothing good.
02:41Like there's nothing good for your like heart
02:43or arteries about it.
02:45You know what I'm saying?
02:45And we're not really known to like work out that hard.
02:48Our fitness is from like playing basketball
02:50or dancing and singing.
02:51You know what I mean?
02:52So it's like we need to like eat
02:54and then it needs to be like,
02:55we're playing basketball,
02:55we're like dancing and singing.
02:56I said it.
02:57Those are all my cousins.
02:58So.
02:58Okay.
02:59What are we going to name it?
03:00What are we going to name it?
03:01Okay.
03:02So I initially just thought,
03:04I don't like,
03:05it's like a combination,
03:06but I don't know if it's strong enough.
03:07I want to name it the Shea Siggy burger.
03:10Shea Siggy.
03:11Yeah.
03:11I like it.
03:13Shea Siggy.
03:14Yeah.
03:14That has a nice ring to it.
03:16I thought it,
03:16I mean,
03:17I'm not going to lie.
03:17Shea goes with a lot of things.
03:19Shea butter,
03:20Shea Anse.
03:22But Shea Siggy is really good.
03:24I love it.
03:24All right.
03:25So walk me through
03:26how we're going to make this burger.
03:28First thing we're going to do,
03:29we're going to make the banana ketchup.
03:40So in a small mixing bowl,
03:42what you're going to do
03:42is you're going to combine
03:43the tablespoon of mustard
03:45with the wagyu beef,
03:46longaniza and bacon.
03:48Okay.
03:48But you don't necessarily
03:49have to use wagyu beef.
03:50You can just use regular brown.
03:51Any kind of beef.
03:52Okay, good.
03:52Okay.
03:53So combine everything
03:54and then mix it up
03:54so it's like all homogenous
03:56in one consistent mixture.
03:58Right.
03:58So once you've done that,
03:59you're going to create
04:00six equal balls of each.
04:02So it doesn't necessarily matter
04:03on the weight of it.
04:04Got it.
04:05From there,
04:05you're going to flatten
04:06each of the patties.
04:08Then you're going to take
04:08a saute pan
04:09and you're just going to heat it up.
04:10So the biggest thing here
04:11is that because of the sugar
04:12in the longaniza
04:13and also the bacon,
04:14the fat in the bacon,
04:15you want to put this
04:17on super high heat.
04:18So you're going to turn the pan on.
04:19No grease needed, right?
04:20No oil.
04:21No, no, no.
04:22There's no fat in this.
04:23You're good to go.
04:23Okay.
04:24And then you're going to throw
04:26those flattened patties
04:26directly on it
04:27so that it really
04:28like get that initial crispiness
04:30of the...
04:31The second you flip it,
04:32put the cheese right on top
04:33and then just put a lid on it,
04:35even put tin coil
04:36and just let the cheese melt.
04:37Okay.
04:38And then you're going to stack
04:39one patty on top of the other.
04:41While that sits there,
04:42you're going to throw
04:42a little bit of butter
04:43in the pan
04:43and then toast your buns.
04:45So the burger build
04:46goes bottom bun,
04:47banana ketchup,
04:48tomato, lettuce,
04:49pickled onions.
04:50Okay.
04:50Two beef patties
04:51and cheese.
04:52Right.
04:53Done.
04:59I am so excited about this.
05:00We got...
05:01I mean,
05:01this is going to be insane.
05:03Already,
05:03we won in my month.
05:04Thanks for collabing.
05:06Like, I'm...
05:06Of course.
05:07Of course.
05:07And when we are able
05:08to travel again,
