00:03Copenhagen's iconic Noma restaurant is reopening its doors under new leadership without its three
00:09stars in the Michelin Guide five months after its founder's public downfall. Former employees
00:14have accused René Redzepi, one of the world's top chefs, and his deputies of verbal abuse and
00:20physical assault. Criticisms also include Noma's long use of unpaid interns to staff the pricey
00:27restaurant. Although the master of new Nordic cuisine had announced his intention to step away,
00:32he remains in a creative director room. Noma says it is beginning a new chapter with long-time
00:38chefs taking charge. What changes right now is the way he is allowing us to be more dynamic in the
00:47way
00:47we take decisions, just like simply giving us even more space to change the menu more often.
00:55In addition, Pablo Soto says new systems have been put in place to make sure staff is safe and happy.
01:02Food critic Tom Sitzema believes Noma's dedication to innovation since its 2003 opening
01:08can help it survive the crisis. I think Noma can survive René Redzepi's poor behavior
01:20and egregiousness. I think that there remains curiosity about the restaurant. You have to be very
01:29careful. It's like writing or anything else. You have to build up this trust with your audience,
01:35but you can lose it in a moment. It takes a lot of mea culpa to get that back. I
01:42think he would be wise to
01:44sort of stay in the shadows in the distance a little bit. The world-class venue offers menus at a
01:49set
01:49price of around a thousand euros. It will not be part of this year's Michelin Guide as it didn't meet
01:55the guide's requirement for being open long enough in 2026.
01:59Thanks.
