01:27We've come to explore the city park,
01:29meeting at Szczesny Thermal Bath
01:31to understand why spa culture is an important part of Hungarian life.
01:36It is actually built for the people, can you imagine it?
01:39Not for the aristocracy.
01:40It's a public bath of the time
01:43because simply people didn't have bathrooms at home.
01:46Built in 1913, the bath welcomes over a million visitors each year
01:51and it's clear to see why it's popular with locals and visitors alike.
01:55The city park was host to the Millennium Exhibition of 1896,
02:01celebrating 1,000 years of the country.
02:04It was a whole exhibition here with over 250 pavilions,
02:08buildings temporary, buildings made of temporary materials.
02:12So the public's favourite from the whole exhibition was the Waidahunyad Castle.
02:18That's where we're standing.
02:19It's an unpronounceable name.
02:21The castle is a mix of architectural styles,
02:24reflecting different periods in Hungary's past.
02:28It has like a Harry Potter style.
02:31Everyone says something like that.
02:33Or Walt Disney Castle.
02:34Yeah.
02:35Yeah, things like that.
02:36The final iconic exhibition was Heroes Square,
02:39a grand entrance to the park itself.
02:42At that time Budapest was not sparing anything,
02:45no money, no space.
02:46It was the time when the country had to show and represent
02:51and celebrate its path.
02:57The next stop on our tour is the Hungarian State Opera House,
03:01one of Budapest's most important cultural landmarks,
03:04supported by Emperor France Joseph I.
03:08But France Joseph, however, limited the size,
03:11he said it cannot be bigger than mine in Vienna.
03:14He should have kept this sentence a bit longer
03:16and he admitted that he forgot to add.
03:19I should have said it cannot be more beautiful either.
03:23No trip to Budapest is complete without a visit
03:26to St. Stephen's Basilica,
03:27named after the first king of Hungary.

04:03to explore the castle district with Gergo.
04:06We are standing actually by
04:07the so-called Fisherman's Bastion,
04:10which is the embodiment of
04:13the turn-of-the-century historicism.
04:17The Fisherman's Bastion was constructed
04:19between 1895 and 1902
04:22and offers incredible views of the city.
04:25Obviously, the one that stands out
04:27is over there, the Parliament Building,
04:29one of the largest parliaments of the world.
04:31The Fisherman's Bastion stands directly beside
04:34Mateus Church,
04:35one of Hungary's most important churches.
04:38So what we see in the colouring
04:40is hundreds of years of history
04:42from the medieval days
04:44all the way to the Hungarian folk art,
04:48through the Hungarian folk art
04:49and all the way to the turn again
04:50of the 1800s and 1900s.
04:53We continue to walk around
04:55the Buda Castle district,
04:56reaching Buda Castle itself.
04:58Unfortunately, from those medieval days,
05:03we don't really have lots of leftovers,
05:06if you can say that,
05:07but this is in his memory.
05:09Today, the castle houses museums and galleries
05:12rather than royalty.
05:14But one special room
05:16has been restored to its former glory.
05:18Here, this fireplace is the one
05:21that stands out
05:22with 150,000 pieces of ceramics.

09:49and the food philosophy
09:50is about childhood memories
09:52and the roots
09:54of Hungarian gastronomy.
09:56The head chef, Ben,
09:57allows me to join him
09:58in the kitchen
09:59to prepare a pasta dish
10:01with a Hungarian twist.
10:04We start by rolling out
10:06pasta sheets,
10:07infusing one of the sheets
10:08with parsley
10:09to give it a green colour.
10:11This is where the artwork
10:12comes in, for sure.
10:15This is when it's no longer food
10:17and it's a creation.
10:18We form a very intricate design,
10:21which is layered
10:22to form a ravioli shape.
10:24So it's an assortment
10:25of wild mushrooms,
10:27black garlic,
10:27roasted garlic,
10:28wild garlic capers,
10:29so rums and capers,
10:31salt and pepper.
10:32The ravioli is cooked
10:34and plated
10:35and the remaining sauce
10:36is served to me
10:37at the table
10:38by the co-owner
10:39of the restaurant Tamas.
10:41So this is a mushroom juice,
10:44just a tiny portion
10:46in the middle.
10:47This is the hole.
10:49That's why the hole's there.
10:51The taste is spectacular.
