This soba noodle salad is perfect for summer. Made with seasonal vegetables and chilled buckwheat noodles topped with a tasty miso-flavored meat sauce, it is easy to make and refreshing, and so delicious!

INGREDIENTS:
- 200 g dry soba noodles - 100g per portion
- ice
- 30 g okra
- 100 g tomato
- 100 g eggplant
- 1 tsp sesame oil - for cooking
- 100 g ground beef - or pork
- 1 ½ tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp miso paste - I used awase/yellow miso
- sesame oil - garnish
- finely chopped green onion - optional garnish

00:07Hey guys, Yuto here from Sashirecipes.com and today I'm going to show you how to make
00:12a tasty summer dish with chilled soba noodles topped with miso meat sauce and seasonal vegetables.
00:19It only takes about 15 minutes, so let's start with the ingredients.
00:24Two portions of dried soba noodles, that's about 200 grams or 7 ounces.
00:29Water for boiling, a cup of ice cubes, three okras, an eggplant, one medium tomato,
00:37a drizzle of sesame oil, 100 grams of minced meat, it could be pork, chicken, beef or soy,
00:44any type of minced meat, one and a half tablespoon of soy sauce, two tablespoons of mirin, one tablespoon
00:53of miso paste and two tablespoons of chopped spring onions to garnish.
01:00So first I'm going to prepare the vegetables. I have washed them all so now I'm going to cut them.
01:06First I have okra. This adds a nice texture to the dish. I'll just cut them into slices like this.
01:23Next I have an egg plant or aubergine from the UK. Leave the skin on and just cut it into
01:30chunks.
01:31Aubergine is a great summer ingredient that absorbs a lot of flavour. Definitely a favourite of mine.
01:40Actually, did you know all of these ingredients are technically fruits? Although they are considered
01:46culinary vegetables, most summer vegetables are actually fruits because they contain seeds.
01:51This includes things like cucumbers, avocados and bell peppers too. Finally the tomato, just cut it in half
02:00so it can sit flat and then cut it into thin slices. We're going to place this on top at
02:08the end.
02:14Next we're going to make the topping. I've got a small pan here so I'm going to heat it on
02:20medium.
02:21And add a drizzle of sesame oil. Once it's hot, add your mince.
02:29I have got pork mince here today, but I often make this dish with chicken mince.
02:35If you prefer to use beef mince or even a meat alternative like soy protein, that's also fine.
02:42It's a pretty versatile dish so it will taste great either way.

02:48Fry it up until it's brown and add the eggplant.
03:11Once the eggplant is softened, add soy sauce, mirin and miso paste.
03:16Mix it thoroughly and add the okra.
03:27I used alice miso in this recipe which is a mixture of red and white miso,
03:32but you can use your preferred miso paste for this.
03:37We're just going to continue to cook this until the sauce is reduced and thickened slightly.
03:43We don't want it to be too liquidy because we want it to coat the noodles.
03:59Finally, I'm going to cook the soba noodles.
04:01Just drop them in a pot of boiling water and let them boil until they're al dente.
04:07This means they're still firm to the bite.
04:10I'm using dry soba noodles and they only take a few minutes to cook.
04:15Check the packaging for specific cooking times.
04:18Cold noodles are a summer staple in Japan.
04:22They're refreshing to eat and so quick and easy to cook.
04:25Perfect for hot days.
04:28Anyway, it's been a few minutes and my noodles are ready.
04:34I'm just going to pour them into a colander to drain the hot water and then cool them quickly
04:40by running them under cold water.
04:43Once they're cool, place a couple of ice cubes in there and make them properly cold.
04:49Okay, time to serve up.
04:51First, place your soba noodles on the plate.
04:57Then, top them with the sauce and place the tomatoes on the side.
05:10Finally, garnish with spring onion and drizzle with sesame oil.
05:18And that's it, delicious chilled soba noodles with a miso meat sauce and summer vegetables.
