00:04Hey everyone it's Yuto from SachiRecipes.com and today I'm gonna show you how to make a quick and
00:09delicious ramen dish we call aburasoba. This is popular Tokyo dish and instead of being served
00:16in a soup it comes in a delicious sauce we call tare. Aburasoba is so easy to make at home
00:23too.
00:25Before we get started I'm gonna start boiling the water for my noodles, turn on the heat to a
00:31medium-high setting and while we wait for that to boil we can prepare our tare. So take a bowl
00:42make
00:42sure it's microwave safe because we'll be heating it in the microwave later. For one serving add one
00:48teaspoon of water, one teaspoon of rice vinegar, two teaspoons of oyster sauce, two teaspoons of soy sauce,
01:02a pinch of chicken stock powder, half a teaspoon of lard, half a teaspoon of garlic paste, quarter a
01:15teaspoon of light brown sugar and about one teaspoon of sesame oil. Just add these ingredients to a bowl
01:23for each serving and mix them up. The great thing about aburasoba is you don't have to spend a long
01:29time making a complicated broth. Making this tare only takes a few minutes so it's a quick meal and
01:36it's so delicious too. Once it's mixed cover the bowl with plastic wrap and then set aside. We'll microwave
01:44it to heat it up and melt the lard but I recommend doing that just before serving. If you're making
01:51like
01:51five or six of them it will be easier to mix the tare in a jug but I wanted to
01:58show you what goes into one
01:59portion. Next I'm going to take some chopped spring onion. Mix about one and a half tablespoons of spring
02:06onion with quarter a tablespoon of ground sesame seeds per serving. This is going to add a nice nutty
02:13flavour to our aburasoba. Of course you can use more or less depending on your preference.
02:27Okay now that my water is boiling I can add my noodles. I'm using thick ramen noodles here and they
02:35only take a few minutes to cook. If you use dried noodles they'll take a bit longer and actually you
02:41can either use spaghetti. I have a video on my channel showing a cooking hack for how to turn
02:48spaghetti into ramen like noodles so check it out if you can't find ramen noodles near you.
02:55The main thing to note here is that when your noodles have about two minutes left of cooking time
03:01that's the best time to microwave your sauce. My noodles are close to being done so I'm going to
03:08microwave the bowl for a minute at 600 watts. Bear in mind that if you're making multiple portion in a
03:15jug it'll need a bit longer. Okay once it's heated through take off the plastic wrap and place the
03:22noodles on top of the sauce. Now we're gonna add some toppings.
03:31Start with the sesame spring onions we mixed up earlier. Next I have menma which are fermented bamboo
03:39shoots. You can buy jars of these at Asian supermarkets. This next ingredient is called
03:48narutomaki, a type of Japanese fish cake. It's a common ingredient to put on ramen but it's not essential
03:56so don't worry if you can get it. Now I'm adding a couple of pieces of chashu. Chashu is a
04:09typical ramen topping made
04:12with braised or simmered pork belly. It's seriously tender and delicious. If you like to learn how to

04:25We're adding some ramen eggs here. You can use soft boiled eggs or even hard boiled eggs if you prefer.

04:39marinated ramen eggs I definitely recommend checking it out. Finally we sprinkle some nori on the top
04:47and it's ready to serve. If you eat aburasoba in Japan you might find that the restaurant shows
04:55instructions or rules on how to eat it. They're optional I suppose but I highly recommend following
05:02these tips. First add a drizzle of extra vinegar this adds some freshness. Next pour in some chili oil
05:10this will make it a bit spicy. If you don't like spicy food you could use sesame oil instead.
05:17The most important step that you definitely shouldn't skip is mix it thoroughly before
05:22you take a bite. You want the sauce to coat everything. I know it looks messy but it's needed
05:29to enjoy aburasoba to the max. This is what you kind of have to do. Lastly enjoy it while it's
05:36hot.
